OggMux is a small user interface as replacement for graphedit, which was the only tool which could be used to multiplex OGM files, and graphedit isn't really comfortable for such a "daily task".

You will need Tobias Waldvogel's OggDS (and for subtitles SubDS) Filters to use OggMux to multiplex your audio and video streams into an OGM file.
I provide no real documentation here as this tool is straight-forward to handle (if you add audio streams or subtitles don't forget to hit the "add" button).
In case you think something is wrong with OggMux, go over to Doom9's forum ("New a/v formats") and see if that matter isn't already discussed there.
